Description
Small seed pearl tapioca is commonly used to make tapioca pudding.
Instead of completely dissolving, the tapioca softens and gives the pudding a lumpy texture.
Tapioca Pudding
1-1/2 cup cold water
1/2 c. pearl tapioca
1 qt. whole or 2% milk
3/4 cup sugar
3 large eggs
3/4 tsp. vanilla
Soak 1/2 cup of tapioca overnight in 1.5 cups cold water in a heavy 2 quart saucepan.
Bring to a boil
Mix 1 qt. milk and 3/4 cup sugar in separate bowl.
Drain water off tapioca, add milk and sugar mix to pan.
Cook and stir till tapioca is clear (at least 30 min.)
Then combine 3 beaten eggs, 3/4 cup sugar and 3/4 tsp. vanilla.
Add to above mixture and bring to a full boil.
Makes about 2 quarts.
